Banana Pikelets by Deb
These pikelets are a great snack for babies and toddlers. They're easy to make and healthy too!

Ingredients:
  • 1 very ripe banana - mashed
  • 2 eggs
  • 3 tbspns sugar
  • 2 cups self raising flour
  • 1 3/4 cups milk (add a tsp of Bi carb soda)
  • Add more milk if the mix is too thick




Method:
In a big measuring jug with a hand or electric beaters:
  • Beat together the eggs and sugar
  • add other ingredients and beat fast and furiously (great exercise) until there are no lumps.
  • Pour dollops into a hot frypan with a little butter (or oil) as big or small as you like and turn when the babybles start popping on the top.
This is a very easy pikelet recipe and can be made in the mixing jug and keeps in the fridge for a few days so the mix doesn't have to be used in one go. It’s very healthy as not much sugar needs to be used.

You have to work fast as they get eaten as soon as they are out of the pan!

"
